Apple Pie Recipe

¼ c butter, softened
⅔ c brown sugar
⅔ c pecan halves
1 T flour
⅓ c brown sugar
¼ t salt
pastry for double crust
½ t cinnamon
6 c peeled Granny Smith Apples (about 4)
½ t nutmeg
1 lemon, juiced

Preheat oven to 450˚.

Spray a 9 inch pie pan with non-stick spray. Spread butter in bottom of pie plate. Arrange pecan halves, rounded sides down, on bottom of pie plate. Gently press into butter. Sprinkle ⅔ cup brown sugar over pecans, gently press.

Roll half of pastry to ⅛ inch thickness and transfer to pie plate.

Combine apples, lemon juice, ⅓ cup brown sugar, and remaining ingredients. Toss gently. Spoon apple filling into pastry shell.

Roll remaining pastry to ⅛ inch thickness and transfer to top of pie. Seal and flute edges. Prick top of crust with a fork so steam will escape. Bake at 450˚ for 10 minutes. Reduce temperature to 350˚ and bake an additional 30 to 40 minutes until golden brown. Cool 5 minutes. Put pan on burner of stove and heat about 1 minute on high. Place serving dish over pie plate and invert. Allow to cool for 30 minutes. Serve warm with ice cream.

Pie can be warmed by placing one slice at a time in the microwave for 15 seconds.
