1 bunch watercress, washed
½ pound asparagus spears, steamed until tender
½ pound sliced smoked salmon
1 head endive, separated
½ avocado, sliced
1 each orange and lemon, zested and juiced
½ tbsp honey
1 tbsp olive oil
1 tbsp minced red onion

Directions:
Directions:
Arrange watercress on plate. Wrap each chilled asparagus spear with a slice of salmon; nestle bundles into endive spears. Arrange these with avocado on top of lettuces. Whisk together remaining ingredients and salt and pepper to taste. Drizzle on top before serving.
