Chocolate Truffle Cupcakes Recipe

Ingredients: 36 oz Belgian chocolate 2 c sugar 1 c water 12 yolks ½ c brandy 12 egg whites 3 c cake flour ¼ c sugar ½ t salt 1 t vanilla 12 oz butter

Directions: |
Directions:Melt the chocolate, water and brandy together. Combine flour and salt. Cream butter and sugar until light and fluffy. Add yolks, and scrape down bowl. Mix for 5 minutes. Add melted chocolate mixture and blend well. Scrape bowl. Fold in flour mixture. Whip whites and sugar to stiff peaks. Fold into chocolate mixture. Put 2 oz. heaping scoops into greased 3 inch cupcake molds. Bake 5 minutes at 350˚.
Put truffle into batter flat side up. Cover with another heaping 2 oz scoop of batter and bake 15 minutes longer. |

Truffle Ganache |

Ingredients: 16 oz semi-sweet chocolate 6 oz butter 1 t vanilla 1¾ c heavy cream

Directions: |
Directions:Heat cream and butter until very hot, but not boiling and pour over chocolate and vanilla. Let stand for 3 – 5 minutes. Stir until smooth. Chill. When cold, scoop with 1 ounce scoop and freeze until ready to use. |
