"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 c semisweet chocolate chips (12 oz)
½ t salt
3 t instant espresso powder
1 c brown sugar
1 stick butter
4 eggs
3 c whole milk
3 T vanilla
13 slices Texas toast, staled and cubed or 1 loaf homemade bread

Directions:
Directions:
Preheat oven to 350˚; coat a deep pan with Pam.

Melt chocolate chips with the sugar and butter in a saucepan over low heat. Stir frequently until chips are smooth, about 8 minutes. Add a little butter if they aren't smooth.

Whisk milk, eggs, vanilla, espresso, and salt together and pour over bread that had been cut into 1” cubes. Toss well so the bread absorbs most of the liquid and begins to lose its shape.

Fold the melted chocolate into the bread mixture, then transfer to the prepared pan. Bake for 1 hour, or until the center springs back when pressed. Cool for 15 minutes.

Can be served with German Chocolate sauce.
