¼ c flour
⅓ c balsamic vinegar
1 t salt
⅓ c chicken broth
¾ t pepper
1 - 12 oz can diced tomatoes
1 T olive oil
2 T capers
4 T garlic, minced
4 boneless pork

Directions:
Directions:
Combine flour, salt and pepper. Dredge pork chops in flour. Cook in hot oil in a skillet over medium-high heat 2 minutes on each side or until golden. Remove chops from the skillet.

Add garlic to the skillet and saute’ 1 minute. Add vinegar and broth, stirring to loosen particles in bottom of skillet. Stir in tomatoes and capers.

Return pork chops to skillet; bring sauce to a boil. Cover, reduce heat, and simmer 5 minutes or until pork is done and sauce has thickened slightly.

I like to serve this dish over penne pasta.
