4 onions, chopped
2 t black pepper
5 T garlic
1½ t dry mustard
4 T butter
1½ t red pepper
3 t salt
2 t white pepper
boneless sirloin roast or top round roast

Directions:
Directions:
Melt butter in skillet. Add onions and garlic. Cook until soft and golden. Add seasoning.

Place roast on a rack in a pan with fat on top. Top with onion/garlic mixture. You can cut holes and stuff the roast or just put the stuffing on top.

Bake uncovered at 450˚ for 20 minutes. Drop temperature to 300˚ and cook until a meat thermometer reads 140˚ for medium doneness, about 20 minutes per pound. Tent and let sit for about 10 minutes.
