1 pound of pork tenderloin
2 tbsp. of cornstarch
1 tsp. of ground cinnamon
2 tbsp. of brown sugar, packed
2 cooking apples, peeled, cored and sliced
2 tbsp. of dried cranberries
1 cup of apple juice

Directions:
Directions:
1. Preheat the oven to 400º F.

2. Place pork tenderloin in a roasting pan or casserole dish.

3. Combine the remaining ingredients in a bowl and stir.

4. Spoon the apple mixture around the pork tenderloin; cover and bake for 30 min.

5. Remove the lid and once again cover the tenderloin with the apple mixture; return to the oven and bake another 15-20 min or until pork tenderloin is browned and cooked through.
