4 chicken breasts, cubed
2 cups of water
1 can of mild chilli beans
1 cup of salsa
1/2 cup of green pepper, chopped
2 cups of Instant Rice
2 cups of cheese, shredded
2 cups of Tortilla Chips, of the round variety

Directions:
Directions:
1. Spray large skillet with non-stick cooking spray. Add chicken; cook over medium-high heat for 12-15 min, or until slightly brown on both sides and chicken is no longer pink in the centre.

2. Add water, beans with liquid, salsa and bell pepper.

3. Bring to a boil; add rice and one cup of cheese.

4. Cover; remove from heat and let stand for 5 min, or until liquid is absorbed.

5. Top with tortilla chips and remaining cup of cheese; let stand, covered, for 3-5 min, or until cheese is melted.
