2 lbs black eyed peas (or red beans, or white beans)
2 c chopped onions
1 c chopped green pepper
˝ c chopped celery
˝ c chopped parsley
3 T chopped garlic
1 pkg Savoie’s Pork or Turkey Tasso (cut up
1 pkg Savoie’s Andouille Sausage cut in ˝ inch pieces
2 T chopped basil, or 1 tablespoon pesto
2 qts chicken stock
4 bay leaves
˝ t thyme
1 t Tony’s

Soak peas/beans in warm water – a few hours for white beans, overnight for red beans

Chop vegetables

Cut up meat.

If including Andouille Sausage in meal, fry the Andouille in a large pot until at least one side is browned. You don’t want mushy sausage. Remove sausage and add all veggies to pot. Cook down.

Drain peas/beans and add with meat to pot. Fill pot with chicken stock and water to cover beans by several inches. Add spices and bay leaves. Bring to a simmer and cook 20 minutes. Add Tony’s till it tastes salty enough. If adding Andouille, go light on the Tony’s and use regular salt later after the Andouille releases its heat. Continue cooking, stirring frequently until done. Add water if needed to keep peas/beans liquid.
