1 large head of cabbage
1 large onion (or leek)
2 T garlic
bacon grease (or 4 pieces bacon)
1 T Tony’s
˝ c water, or apple juice, or apple cider, or combination

Directions:
Directions:
Cut up cabbage into bigger than you can eat sizes (kids, not the cabbage core though). Slice up onion into ˝ inch by 1˝ inch strips. Add 3 tablespoons bacon grease to deep pot and heat on medium high, or cut 4 bacon strips into 1 inch pieces and fry till browned. Add cabbage to pot. Add onion. Add about ˝ cup water/liquids. Stir all this until the water starts to steam and the cabbage is quite hot. Add garlic and Tony’s and cover. Reduce heat to medium and cook covered. Continue to stir about every 5 minutes so cabbage does not scorch. Cabbage will start to create its own liquid at some point to help itself steam and/or not burn. Taste as cabbage softens to judge salt content. Wait till the end though to add more Tony’s. Smothered means to cook the cabbage “down” till it is very soft to let all the flavors combine.
