8 potatoes*
1 stick butter
1 T salt
1 T pepper
1 c milk, half and half, or light cream
½ c sour cream

Wash, peel and cut potatoes into ¾ inch pieces. Place in pot, fill with water and bring to a slow boil. Drain water when soft.

Add milk, sour cream and butter – this is not diet food. How much? A big pot of potatoes needs about a stick of butter, a cup and a half of sour cream, and a cup of milk/liquid. Whip it till smooth. Adjust the milk till the mixture is fluffy and not too thick. Add it slowly - it is trial and error. Add salt and pepper to taste. Taste and adjust with whatever is missing. More sour cream is never a bad move, by the way.

* A 50/50 mix of Russets and Yukon Golds works best. Either works fine alone.
