8 chicken breasts, skinless
4 onions, chopped
8 eggs
⅓ c mayonnaise
3 dill pickles, chopped
¼ c mustard
½ c parsley, minced
salt & pepper
1 pack celery (¾ c for salad; remainder chopped to boil chicken)

Directions:
Directions:
Boil chicken breasts in water along with chopped onions and celery and seasoned with salt and pepper. This usually takes 30 to 40 minutes. When chicken is tender, put in a colander to drain. When slightly cooled, debone chicken and cut in small pieces.

Boil eggs. When done, separate egg whites and egg yolks. Mash egg whites. Mash egg yolks and mix with mayonnaise and mustard mixture. Combine all of the above ingredients together along with chopped pickles, celery, and parsley. Mix well and adjust seasoning.

Note: The mixture of mayonnaise and mustard may have to be adjusted and a little more of each added until it is the right consistency. It is always best to use less and then add more; otherwise the salad may be too mushy.
