2 onions, coarsely chopped
2 red bell peppers, cubed
4 cloves of garlic, minced
1 T salt
4 jalapeño peppers, seeded and minced
1 c fresh cilantro, coarsely chopped
2 - 28 oz cans tomatoes, chopped with juices
1 - 28 oz can tomato sauce
3 t ground cumin
2 T chili powder
1 t dried oregano
3 t ground coriander
½ t red pepper flakes
1 t dried marjoram
½ t cinnamon
2½ lb ground beef
2 - 16oz cans black beans, drained and rinsed

Brown ground beef and drain fat.

In large pot combine onions, bell pepper, garlic, jalapeño peppers and tomatoes. Stir in chili powder, cumin, coriander, oregano, marjoram, cayenne pepper flakes, salt, and cinnamon. Cover pot and simmer on medium high heat 10 minutes, stirring half way through.

Stir in beans, beef, and tomato sauce. Re-cover and simmer 4 more minutes. Add cilantro and simmer covered on low to medium heat for at least 30 minutes. Flavors get better if refrigerated overnight.
