6 lbs ground pork
2 lb ground turkey
8 T fine minced ginger root
2 pkgs chopped frozen spinach
6 T Hooch Juice
1 large Chinese cabbage
4 T sesame oil
2 eggs
2 bunches green onions
4 T Tony’s
6 T soy sauce
150 - 200 wanton wrappers

Steam cabbage in a large pot with lid with about 2 inches of water in the bottom. Steam just until the cabbage is hot throughout, about 10 minutes. You don’t want mush. Let cool.

Using two really large bowls, split the meat evenly. Split the remaining ingredients between the two meat bowls: frozen spinach crumbled as small as possible, finely chopped green onions, cabbage that has been drained well and chopped, ginger minced in a food processor, soy sauce, sesame oil, and Hooch Juice. Start to mix contents of bowls with your hands and add Tony’s. Enough to make it spiced correctly. Don’t overdo it on the Toni’s. Try 4 tablespoons and then record if that is enough. Mix meat thoroughly.

Start boiling water in a large pot for steamers.

Break and beat eggs. Wet half the edge of the round wanton with the egg mixture. Place about a teaspoon to tablespoon of meat mixture in and close the wanton edges (wet to dry).

Spray bamboo steamer with Pam. Arrange dumplings in steamer with about an inch between the dumplings. Steam first batch for 15 minutes. Steam all others for 12.

Serve with Hooch Juice.
