4 cloves garlic, minced
1½ c onion, chopped
1 c poblano peppers, chopped
2 lbs Velveeta
1 c red or green pepper, chopped
1½ t cumin
1 t chili powder
2 c sour cream
½ c corn oil
Tabasco or jalapeño juice

Directions:
Directions:
Saute’ garlic, onion, and peppers in the corn oil until they begin to get tender. Add cumin and chili powder, and cook about 3 minutes longer. Do not brown vegetables. Reduce heat and add cheese; cook slowly, stirring until cheese melts. Just before serving, stir in the sour cream. Taste and add Tabasco or jalapeño juice if necessary.
