4 chicken skinless, boneless, breast halves - cut in half
2 tbsp. flour
½ tsp ground cumin
½ tsp salt
1 jay marinated artichoke hearts
1 medium onion, cut into ½" wedges
½ cup Pace picante sauce (mild or medium)
½ cup dry white wine or vermouth
2 tbsp. soy sauce
1 small tomato, coarsely chopped
1 small green pepper, coarsely chopped
Hot cooked rice

Pound chicken to tenderize. Coat chicken with combined flour, cumin, and salt. Drain and coarsely chop artichokes, reserve marinade. Lightly brown chicken in 2 tbsp. artichoke marinade in 10" skillet over medium heat. Remove chicken from skillet; cook onion in drippings for one minute. Add picante sauce, wine and soy sauce; mix well. Return chicken to skillet. Cover and simmer over low heat for 20 minutes. Add green pepper and artichoke hearts. cook until green pepper is crisp tender. Add tomato and heat through. Serve over rice. Makes 4 servings.
