SALAD:
1 large head of romaine lettuce
1 cup chopped fresh parsley
½ cucumber, sliced
1 green pepper, sliced
¼ sweet red onion, thinly sliced
12-15 Greek olives
2 ripe tomatoes, cut into wedges
4-6 oz feta cheese, crumbled
Anchovy fillets if desired

DRESSING:
¾ cup extra-virgin olive oil
¼ cup lemon juice
2 tbsp. dried oregano, crushed
Salt and pepper to taste

Directions:
Directions:
Wash and dry romaine, and break or cut into bite-size pieces. Cut up and add the parsley, cucumber and green pepper.

Put all dressing ingredients in a container with a tight-fitting lid, and shake well. This is best made at least a few hours in advance, but do not make extra to save. Lemon juice does not hold its freshness.

Just before serving, pour on the dressing and REALLY toss the salad.
