6 tbsp. butter
3 eggs beaten
1 1/2 cups sugar
1 1/2 cups flour
1 1/2 tsp. baking powder
1 cup chopped walnuts
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsp. almond extract
3 cups peeled and chopped apple

Preheat the oven to 325º. Mix all ingredients in a large bowl with a wooden spoon. Place the batter into a large rectangular pan and bake for 50 minutes.

I like to cut this cake up into squares and freeze them for lunch box treats! You can add whipped cream when serving. Also I like to add 1 tbsp. of apple liqueur to the mix to amp up the apple flavor.
