1 sourdough loaf, sliced
2 T olive oil
1 lg onion, thinly sliced
1/2 t Berbere
1/4 t salt
1 12 oz bag spinach
1 c Parmesan, grated
1 c mayo (no fat free)
1/4 t pepper
1/4 t oregano

Directions:
Directions:
Preheat oven to low broil. Heat olive oil over medium heat and add onion, berbere and salt, and cook until brown and tender, about 15 minutes. Add washed and dried spinach and let cook until all liquid has disappeared. Cool. Mix with cheese, mayo. Spread mixture on bread and sprinkle with pepper and oregano. Broil 4-6 minutes.
