I whole chicken
1 head of garlic
4 - 6 carrots - sliced
1 onion - quartered
3 - 4 potatoes - sliced
1 lemon
sea salt and pepper
2 - 3 tbs. butter - melted

Directions:
Directions:
Clean chicken and dry. Add salt and pepper to cavity. Cut head of garlic in half (no need to peel) and quarter lemon. Add garlic and lemon to cavity of chicken. Tie legs together. Salt and pepper chicken - brush with butter. Put potatoes, onions and carrots in bottom of roasting pan. Put chicken on top of vegetables. Pour any remaining butter on vegetables. Roast at 425' for 1 1/4 - 1 3/4 hours depending on size of chicken. Remove chicken from pan and cover with aluminum foil. Let sit for 15 minutes before carving. Return vegetables to oven to caramelize while chicken is cooling.

Use a pan close to size of chicken to keep vegetable from burning. Makes a great dinner and leftovers are great for chicken salad.
