5 eggs
3 c. milk
2 c. flour
1/2 c. sugar
1 T. vanilla
3 T. butter or margarine, melted

Directions:
Directions:
Put all ingredients (except for butter) in bowl or blender and blend until mixture is smooth. Melt butter and pour into mixture while continuing to blend.

Pour about 1/4 cup of mixture into a 9-10 inch frying pan that has been heated to 350 F. and the bottom coated lightly with butter.

Tilt and roll pan to spread mixture evenly across bottom of pan. (This must be done quickly). Allow pancake to cook until top solidifies (loses glazed/liquid look). Use spatula to reach under pancake and turn it over. Cook until bottom becomes slightly brown/tan in spots. Remove pancake from pan and put on plate.

Lightly coat with powdered sugar, jelly, or maple/other syrup. Roll up pancake into about a 1-2 inch diameter roll, and eat. Pancakes are best if eaten as soon as they come out of the frying pan. They can be placed in a warm oven, and served later, but will lose some of their texture.

This recipe has been passed down from Grandma Pat's mother and enjoyed for generations! Note: If more than 2 people are seated, it's best to use 2 or more pans so that pancakes can be served hot and right out of the pan.
