CHICKEN:
4 half, boneless chicken breasts
½ tsp salt
¼ tsp pepper
3 tbsp butter
1 can frozen orange juice, thawed
¼ cup salted, roasted almonds, chopped
2 tbsp bourbon

RICE:
2 cups cold chicken broth (granules work fine)
1 cup white rice
¾ tsp salt

CHICKEN:
Season and brown chicken in butter on both sides over medium heat. Reduce heat to low and add orange juice and salt and pepper. Cover and cook 20 minutes until chicken is tender. Stir sauce and spoon over chicken once or twice. Remove chicken to platter and sprinkle with nuts. Reduce liquids in pan to consistency of heavy cream. Cook over high heat, stirring. Add bourbon and stir to blend. Pour over chicken and serve over rice.
RICE:
While working with chicken, prepare rice. Bring all ingredients to a vigorous boil. Cover and turn to lowest heat. Simmer for 14 minutes. Do not remove cover. Remove from heat, let steam with cover on for 10 minutes or longer before serving.
