3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 cup chopped nuts
Powdered sugar

Filling:
1 cup powdered sugar
8 oz cream cheese
4 TBSP butter
1/2 tsp vanilla

Directions:
Directions:
Beat eggs on high for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. In a separate bowl, stir together dry ingredients and fold into pumpkin mixture. Put waxed paper in a jellyroll pan then spray and flour the paper. Spread mixture on paper and sprinkle with nuts. Bake at 375 F for 15 minutes. Turn out on a towel that has been sprinkled generously with powdered sugar. Roll towel and cake together - put in fridge to cool. Make filling by mixing the filling ingredients and beat until smooth. Unroll cake and spread filling over cake. Roll again and chill.
