1 cup quinoa
2 cups water (or chicken broth)
1 container grape tomatoes
1/2 sweet yellow pepper, chopped
1/2 green pepper, chopped
1/2 long English cucumber
1/3 cup fresh parsley, chopped
3 T extra virgin olive oil (EVOO)
2 T apple cider vinegar
1 garlic clove, minced
dash of salt and pepper

Rinse quinoa well. Bring water or broth to a boil and add quinoa. Stir, then cover and reduce heat to low. Cook for 15 minutes or so. Quinoa will have a translucent ring around them when they are fully cooked. Let cool, fluff with a fork.
Add veggies and parsley.
In a small bowl, combine EVOO, vinegar, and garlic. Drizzle over salad. Mix.

Tastes even better if you let it stand for a bit, just to let the flavours mix. Mmmm.
