• 1 lb large raw shrimp
• 1 (8 ounce) can crab meat
• 4 eggs
• 1 cup onion, finely chopped
• 3/4 cup celery, finely chopped
• 1/4 cup green bell pepper, finely chopped
• 1/2 cup green onion top, finely chopped
• 1/2 cup cracker meal, can use bread crumbs’
• 1/4 lb oleo
• 2 hamburger buns, stale (can use 3 slices stale bread)
• 1/2 cup evaporated milk
• 1 teaspoon salt
• 1 teaspoon black pepper

Choose 8 of the largest shrimp and peel down to tail, leaving tail on.Split the large shrimp down the back.

Boil the rest of the shrimp until tender, about 10 minutes.Peel and clean boiled shrimp. Drain and set aside.

In a heavy skillet, melt oleo and saute vegetable until tender, about 5 minutes, set aside to cool.

Soak stale buns in eggs that have been beaten.

Grind or chop boiled shrimp very fine. She also grinds the vegetables, but it is not necessary.

Mix all ingredients including boiled shrimp, vegetables, soaked bread, eggs and cracker meal.

Add Salt and Pepper to taste.

Make 8 balls out of the mixture. Hold one ball at a time in your hand and press it around the large, split shrimp to form a croquette roll.

Roll 8 shrimp in flour, then heavy egg batter, then in cracker meal or bread crumbs.

Deep fry in very hot cooking oil until golden brown, about 6 to 10 minutes. Remove from heat and place on paper towel to drain.

2 beaten eggs, 1/2 cup evaporated milk, pinch of salt.
