1 1/2 lb. small potatoes red, white, or a mixture of both
1/8 cup olive oil
2-3 tbsp. chopped rosemary leaves
3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. old bay seasoning

Directions:
Directions:
Preheat oven to 400º and place baking sheet in to heat. The potatoes bake better when placed on a warm baking sheet to start. Cut each potato into four wedges. Mix wedges with olive oil, salt, pepper, old bay seasoning, and rosemary leaves. Place on warm baking sheet in one layer. Bake for 20 minutes and then flip potatoes over. Bake another approximately 30 minutes and check for crispiness. You may need to adjust the time based on the potato size. Taste to check if more salt or pepper are needed. I also sometimes add additional chopped rosemary at the end to boost the flavor.
