1 tsp canola oil
2 tsp grated gingerroot
1 clove garlic minced
1&1/2 c. uncooked, long grain white rice
3/4 c. light coconut milk
1 tsp. each honey and grated lemon zest
1/2 tsp salt

Directions:
Directions:
Heat oil and fry oil and garlic. Add rice and fry for one minute.
Stir in coconut milk, 2&1/4 c. water, honey, lemon zest and salt. Bring to a boil. Reduce heat to medium low and simmer for 20 minutes, or until liquid is absorbed. Fluff.
