2 T. canola oil
4 cloves garlic
1 large eggplant, pealed, cut in cubes
2 tomatoes, chopped
2 Kolhapuri (p. 32 in 600 curries)
1 tsp. salt
1 tsp. sugar
1/2 tsp. turmeric
1/4 c. chopped cilantro

Directions:

1. Saute garlic and eggplant at medium-high heat.

2. Add a little bit of water and the rest of ingredients (about 15 minutes)

3. Add cilantro towards the end

4. Let it be very tender.
