WALNUT
1 1/2 cups of coarse ground nuts
1/4 cup sugar
1/2 tsp vanilla
2 egg whites, beaten stiff but not dry .
Combine all the ingredients. Let filling set at least 30 minutes.
WALNUT HONEY
1 1/2 cups of coarse ground nuts
2 Tbsp butter
1/4 cup honey
Melt the butter, add honey. Cook for 2 minutes over moderate heat. Remove from stove. Add the ground nuts and sugar. Cool before using. Set 30 minutes.
WALNUT PINEAPPLE
1 1/2 cups ground nuts
1/2 cup well drained crushed pineapple
1/2 cup sugar
3 egg whites, beaten stiff but not dry.
Combine all the ingredients. Allow the filling to stand several hrs. for full liquid absorption.
APRICOT
1 pound of dry apricots
sugar to taste
Cover the apricots with cold water and let stand several hrs. Cook over mod. heat till soft. Add the sugar to taste. Recook if necessary for desired consistency, stirring vigorously to a smooth consistency.
APRICOT-PINEAPPLE
1 pound of dry apricots
1 -6 oz.can of crushed pineapple
Drain pineapple juice and add to the dry apricots. Cook till the apricots are soft. Add the crushed pineapple and sugar to taste. Recook for desired consistency.

COTTAGE CHEESE FILLING
1 lb of dry cottage cheese -not creamed cottage cheese as it is too liquid . (Can use farmers cheese or ricotta cheese.)
1/4 cup sugar
1 tbsp of butter
1 egg beaten
1/4 tsp of lemon rind
Melt butter,cool slightly. Add the egg, sugar and cheese. Add lemon rind; taste and adjust for sweetness .
POPPY SEED FILLING
1/2 pound of ground poppy seed.
1/2 tsp of salt
1/2 cup of sugar
1/2 cup of sweet cream
1 tsp of butter
1/4 tsp grated lemon rind
Combine all ingredients and cook until the milk is absorbed and the filling is quite thick. Adjust sugar to taste .
UNCOOKED POPPY SEED
1/2 pound of ground poppy seed
1/2 tsp salt
1 cup sugar
1 tsp of vanilla
1/2 cup of milk
Add enough milk to make this filling of thick consistency. Allow it to stand overnight or several hours for full liquid absorption.
To real poppy seed lovers this recipe is the best as without cooking the unique taste of the poppy seed remains rich and sharp

Use one tsp of filling for each kolachki . You can expect that 2 cups of filling will do 3 doz of kolachki.
The egg whites are used as the moisture filling as it has no taste and will harden the filling .
Always judge the consistency of the filling when it is hot . If it is thick on the top of the stove it will not run in the oven .

When Babka and Dzedo lived at Addanack in the 1950's. Babka used to bake all day Saturday so when the family came to visit on Sunday there would be enough Kolach to feed us all. Because the Addanack house was very small the grandchildren would have their coffee and their Kolach first sitting on benches around the wood table. After we were done eating our fill then we were told to play outside and the men would come in and have their coffee with their Kolach. After they were done then they all left to look at the mine horses that Dzedo cared for or they brought their guns out to do some competitive shooting --mostly at cans.
Then it was the woman's turn and needless to say they would sit around the table for hours discussing the weeks events .
I just remember Bubka putting a big bread pan full of Kolachi on the table and there was always enough to go around.
Good memories from the Attanack house. Bubka and Dzedo left Attanack in 1956. I believe they lived at Attanack for approx 10 yrs . Dzedo had hurt his back working in the mine so he was placed by the mine officials to be a watch man at the gates. He was responsible for the mine's security and also was responsible for everyone that passed through the gates including the miners that were bused into the mine.
They lived a very isolated life for many yrs but I have to say that I remember them being happy . Dzedo managed to create a home for them in the wilderness . I remember sidewalks; fences, a garden and also a steel barrel that he used for cold storage . There was a creek in close proximity so he was able to use the creek to their advantage.
Babka was also content and as a child I do remember our grandparents playing a lot of cards together . Bubka sewed, knitted and fed everyone that came to the house . She also was a great walker and berry picker and would walk many miles to harvest her berries. Probably my fondness memories is picking mushrooms and also wild flowers with her. She was very respectful of the wild flowers and taught us how to pick the flowers without destroying the root system. I believe that she was a conservationist long before it was fashionable to be so . She would compost and recycle and had a great respect for the wilderness . She was a very wise lady and I feel that we were truly blessed as it was she that taught us the importance of family.
