1/2 cup sugar
1 Tbsp flour
1/2 tsp cinnamon
1/4 tsp nutmeg
4 cups thinly sliced peeled peaches or frozen unsweetened peach slices
1 tsp lemon juice
1/3 cup finely crushed vanilla wafers
2 Tbsp chopped almonds
1 Tbsp butter, melted
1 single pie crust.

Pie crust:
1 1/4 cups flour
1/3 cup shortening
3 - 4 Tbsp cold water

Pie crust:
In a medium mixing bowl, stir together flour and 1/4 tsp salt.
Using a pastry blender, cut in shortening until prices are the size of small peas.
Sprinkle with 1 Tbsp water then toss gently with a fork. Push moistened dough to the side of the bowl and repeat with 1 Tbsp of water at a time until all the flour is moistened. Form dough into a ball.
On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from the center to the edges forming a 13" circle.

Tart:
In a large mixing bowl, stir together the sugar, flour, cinnamon, and nutmeg. Add peaches and lemon juice until well coated. If using frozen peaches, let stand 15 - 30 minutes or until the peaches are partially thawed, but still icy.
Transfer the pie crust onto an ungreased pizza pan or a 15x10x1" baking pan. Stir peach mixture, then mound it in the center of the pie crust, leaving a 3" border. Fold the border over the peach mixture.
In a small bowl, mix together the vanilla wafers, almonds, and butter. Sprinkle mixture over the peaches
To prevent over browning the edges, cover the edge of the tart with foil.
Bake at 375 for 20 minutes for fresh peaches and 40 minutes for frozen. Remove the foil, then bake for another 20-25 minutes or until crust is golden brown. Cool tart in the pan n a wire rack. Serve warm or cool.
