12 ounces fresh or frozen shrimp, shelled and deveined
1 cup chopped onion
2 Tbsp butter
1 Tbsp olive oil
1 cup Dry White Wine
1 Tbsp chicken bullion granules
1 tsp dried basil, crushed
2 medium tomatoes, peeled, seeded, and chopped (~1 cup)
10 ounces hot cooked pasta
1/4 cup butter, melted
1/2 cup grated Parmesan cheese
1/2 cup snipped parsley

Thaw shrimp, if frozen
In saucepan, cook onion in 2 Tbsp butter and the olive oil until tender but not brown
Sir in wine, bullion, basil, 1/2 tsp salt, and 1/8 tsp pepper.
Bring to boiling; reduce heat. Boil gently, uncovered, for 12 to 15 minutes or until about 2/3 liquid is evaporated.
Halve the shrimp lengthwise
Add shrimp to mixture and cook until shrimp is tender.
Add tomatoes and cook until heated through.
Toss pasta with 1/4 cup melted butter.
Add shrimp mixture, cheese and parsley; toss until pasta is coated

You can substitute 12 ounces fresh scallops for the shrimp
