2 large bone-in chicken breasts with skin on
1 large bag of baby spinach
1 bottle of bar-b-que sauce (I use Rendezvous)
1 bottle of bar-b-que dry seasoning (Rendevous)
Oregano

Directions:
Directions:
Pre-heat oven to 325°
Place each chicken breast on a sheet of tin foil. Shape the foil in a pouch leaving the top open at this time. Pour at least ˝ cup of bar-b-que sauce on the chicken.

Sprinkle 4 tbsp of dry seasoning on the chicken. Sprinkle a good covering of oregano.

Close the tinfoil at the top by just squeezing it closed. Don’t twist the foil. Bake for40 minutes.

In a skillet, sauté a large bag of baby spinach in olive oil using a pinch of salt. The spinach will reduce dramatically.

After the chicken is done, use a base of spinach and place chicken on top. Sprinkle 1 tbsp each of dry seasoning and oregano on the chicken.
