1/2 c. .......... Butter
1/2 c. .......... Granulated Sugar (White Sugar)
1/3 c. .......... Brown Sugar
1 ................. Egg
1/2 tsp ........ Vanilla
1 1/2 c. ....... Flour (Unbleached or All-Purpose)
1/4 tsp ........ Salt
1/2 tsp ........ Baking Soda
1/4 tsp ........ Cream of Tartar

1. In a large bowl, cream together butter and sugars with electric mixer on high speed. Add egg and vanilla and beat until smooth.

2. In another bowl, combine flour, salt, baking soda, and cream of tartar.

3. Pour dry ingredients into butter mixture and with electric mixer on low speed or wooden spoon, mix ingredients until just combined. Do not overmix.

4. Preheat oven to 300º F and Chill dough in refrigerator for 30-60 minutes while oven preheats.

5. Optional step: In a small bowl combine 2 tablespoons of sugar and 1 teaspoon of cinnamon (to roll cookies in before baking).

6. Roll dough to desired size and place balls in sugar cinnamon mixture, coat the ball of dough thoroughly and place on ungreased baking sheet.

7. Bake cookies for 12-16 minutes. Cookies may seem undercooked coming out of the oven but will continue to cook after removed from oven. When cooled they will be soft and chewy.
