1 4-6 lb. Pork Shoulder
2 c. Seasoning or Dry Rub to taste.
1 - 22 oz. bottle "dry" Hard Cider
1 1/2 c. Apple Cider Vinegar
12 oz. Real Apple Cider
1 c. Brown Sugar
1/s bag Applewood Chips, or another flavor.

In a disposable tin pan coat entire shoulder in a dry rub, let set for as long as you can but at least one hour. Mix all wet ingrediants with the brown sugar and set aside. Soak wood chips in apple juice at least half an hour. I use charcoal grill, using indirect heat to cook. Start by getting grill ready, when ready place pork in pan on grill with fat side up, pour in wet rub and start smoke on medium heat for at least 1/2 hour to 1 hour, checking color of meat on the outside to get a bit of smoke to meat. After first hour cover completely with foil. continue cooking on low to medium heat checking about every 45 minutes until meat pulls apart easily with fork. There should be a good amount of liquid in pan. You can always add liquid while cooking. Once meat pulls apart, I like to re-smoke for an added 20 to 30 minutes which is an option but give more smoke flavor. To serve remove meat from sauce and slice or pull apart. Adding some juice from the pan to moisten if needed to serve or some on the side to dip in. Serve with a good outdoor statium bun on. Very good with coleslaw or dill pickle

While cooking if the meat looks dry at start you can tent or lower temp earlier or if it doesn't have the right color, you can leave untented longer.

Orange juice can be used instead of cider for a different taste.

Also after letting dry rub sit you can add liwuid to pan and let sit for added time. ENJOY!!!!
