1 pkg. (8-1/2 oz.) corn muffin mix
1 cup Shredded Cheddar Cheese (Mexican blend works well)
¼ cup chopped red peppers (roasted are great!)
2Tbsp. chopped mixed pickled jalapeños

Directions:

HEAT oven to 400°F.
PREPARE muffin batter in medium bowl as directed on package. Stir in remaining ingredients just until blended. Pour into greased 9 muffin tins
BAKE 18 to 20 min. or until lightly browned.
