2 c heavy cream
2 c Half and Half
1 c sugar
1 1/2 tsp vanilla
1/8 tsp salt
FOR CHOCOLATE ADD:
6 Tbsp Hershey's Cocoa OR 1/2 c Hershey's Chocolate Syrup
1/4 tsp ground cinnamon
VARIATIONS ON CHOCOLATE ICE CREAM:
- Add 1 tsp rum
- Add 1 tsp Almond extract before processing, and 1/2 c coarsely chopped almonds after processing but before hardening
- add 1/2 c mini chocolate chips after processing
- Add 1/4 c mini chocolate chips and 1/4 c nuts after processing
- Add 3 Tbsp instant coffee powder
- Add 3 Tbsp instant coffee powder and 1/4 c Bristol Cream Sherry
VARIATIONS ON VANILLA ICE CREAM:
- substitute 1 Tbsp peppermint extract for the vanilla, add 8 drops green food coloring, stir in 3/4 cup chocolate chips after processing.
- substitute 2 tsp peppermint extract for the vanilla, add 1 tsp red food coloring. Stir in 1 1/2 c crushed peppermint candy after processing but before hardening.
- Kool Kreem: add one packet Kook Aid unsweetened drink mix any flavor
- Peanut Butter: add 3/4 c smooth peanut butter. After processing mix in one 8 oz chocolate bar, broken into small pieces
- Coffee: Add 2 Tbsp instant coffee powder
- Maple Walnut: add 1 Tbsp maple extract, mix in 1/2 to 1 c chopped walnuts after processing
- Buttered Pecan:substitute brown sugar for white sugar, add 1/2 tsp butter extract, mix in 1/2 c to 1 cup chopped pecans after processing

Directions:
Pour cream directly into cream can (from your ice cream maker). Add sugar, vanilla and salt and stir. Proceed with directions from your ice cream maker.

TIPS for making ice cream: You will layer ice and salt around the cream can. Don't skimp on salt, it makes the ice melt and pulls the heat from the cream mixture.

For my Waring Ice cream parlor the directions are: use 4 trays ice cubes, one standard 26 oz box of ordinary table salt, two cups of water. Load cream can and place in ice cream maker. Start the motor. Pour in 1 cup of cold water, one layer of ice cubes one cube deep, sprinkle 6 tablespoons of salt. Repeat layers until full. Sprinkle on any remaining salt and slowly pour the remaining cup of water over. Process until the ice cream is done (motor begins to labor and slow down). Remove Dasher. (Add any mixins now). To Harden: Remove cream can, stir to blend together. Pack down to remove air pockets, cover with plastic wrap and snap lid back on. Place in freezer for 1 to 2 hours.
