Crust:
1 cup (2 sticks) butter, melted
2 cups all-purpose flour
1 cup confectioners' sugar
1/8 tsp. salt
Filling:
6 eggs
3 cups granulated sugar
3 tbl. grated lemon zest
1/2 cup fresh lemon juice (about 3 - 4 medium lemons)
Additional confectioners' sugar for dusting

Directions:

Preheat the oven to 350º and butter or spray a 9x13" baking pan.
For the crust, combine the butter, flour, confectioners' sugar, and salt in a glass bowl. Mix well, then pat it on the bottom of the pan. Bake for 15 - 20 minutes until slightly golden.
For the filling, while the crust is baking, beat together the eggs, granulated sugar, lemon zest, lemon juice, and flour. Pour over the baked crust and bake for an additional 30 - 35 minutes, until golden brown. Allow to cool completely, then sift confectioners' sugar over the top.
Store in refrigerator.

When the boys were still in school I loved to watch Paula Deen's cooking show to get ideas. Her recipe for lemon squares is my favorite version--so Southern, crusty and tart--just like Paula Deen.
