1 Medium onion
butter
mushrooms
mayonaisse
sour cream
halibut
cheddar cheese

Directions:
Directions:
Fine cut onion and place in a frying pan with 2 tablespoons butter and fry until onion is clear.
Place onion/butter mix in bottom of cooking pan (a 9x13 cake pan or pyrex dish)
Drain 1 can mushrooms (or use fresh) and place uniformly on top of onion/butter mixture.
Place fish on top
Use 50/50 mayo/sour cream mixture, enough to completely cover fish
Use grated cheddar all over the top.
Bake uncovered for 15 to 20 min (max) at 450 . Thicker pieces make take longer.
Remove fish from oven a few minutes early and let stand for 5 min as it will continue to cook.

This is compliments of one of the chefs on board the Sir Wilfrid Laurier. I had his but for home I definitely used light mayo & light sour cream and went easy on the cheese but it is still fairly rich. But oh so Good!!
