• 1 Lb. lean boneless pork
• 2 Tbsp. salad oil
• ¼ cup hot water
• 6 to 8 green onions, cut in 1 inch pieces
• 1 ½ cups slivered celery
• 5 oz. can water chestnuts, thinly sliced
• 1 cup chicken stock
• 1 Tbsp. soy sauce
• 1 Tbsp. corn starch

Directions:

Cut the meat into thin strips. Heat the oil in a large heavy frying pan, add meat and stir over medium heat until rawness disappears. Add hot water, cover, and simmer 20 minutes over lowered heat.

Add onions, celery, chestnuts, broth, and simmer covered for 15 minutes. Add combined soy sauce, and cornstarch, stirring until slightly thickened. Taste for seasoning and serve with rice.
