1 Tbsp of veg. oil
1 small onion chopped
2 gloves of minced garlic
2 chopped green peppers
3 cups of sliced fresh mushrooms
4 eggs slightly beaten
1 can of evaporated milk
1 tsp of salt
1/2 tsp of black pepper
16 slices of day old baguette
16 plum tomato slices (approx 4 tomatoes)
1 tsp of dried basil
1 cup of shredded mozzarella cheese
4 tomatoes

Directions:
Directions:
Pre -heat oven to 350
Heat the oil in a large skillet -cook the onions /garlic /peppers /mushrooms till soft . Spoon this evenly into a 9 by 13 inch baking dish .
Stir together the eggs /milk salt /pepper in a bowl . Pour this mixture over the vegetable mixture,
Arrange bread slices side by side over the top. Topping each bread slice with a tomato slice .
Sprinkle with the basil .
Bake 30 min.then remove from oven and sprinkle with cheese . Broil 5 minutes or until the cheese is golden .
Let stand 15 minutes prior to serving .
