DRESSING
3 tablespoons orange juice
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
1 teaspoon dijon mustard
Salt and fresh cracked pepper to taste

SALAD
1 bag spinach leaves
1 apple
4 ounces blue cheese crumbles
1/3 cup dried cranberries
1/4 cup pecans

Directions:
Directions:
Whisk together dressing ingredients in a small bowl. Toss the dressing with the spinach and apples until well dressed. Toss in blue cheese, cranberries, and pecans until just mixed.

This salad is great as a side dish, or add chicken to make it an entree.
