6 T. butter
1/2 c. flour
2 c. cooked wild rice
1/2 c. finely diced cooked chicken
1 c. half and half
3 T. parsley, chopped
1 T. onion, minced
3-4 c. chicken broth
1/2 c. carrots, shredded
1/2 ts. salt
2 T. dry cooking sherry

Directions:
Directions:
Melt butter in large saucepan and saute onion until tender. Blend in flour; gradually stir in broth. Cook, stirring constantly, until mixture comes to a boil and stir one minute.

Stir in rice, chicken and salt; simmer five minutes. Blend in half and half and sherry and heat to serving temperature.

Add parsley just before serving.
