1/2 cup of luke warm water
1 tsp of sugar
1 tbsp of yeast

4 cups of warm water
3 tbsp of mashed potatoes

Add 4 cups of flour to the water /potato mixture and beat well
Add the risen yeast and beat well . Let stand in a warm area till sponge is bubbly -approx. 30 minutes.
Then add
4 tsp of salt
1/4 cup of sugar
1/4 cup of oil
4 cups of flour

Knead adding more flour as necessary . Knead 15-20 minutes
till the dough is elastic like;shiny; and comes off your fingers easily .
Let the dough rise 1 hr. and 15 min. Punch down and let rise again for 3/4 of an hr.
Shape into loaves or bread buns and let rise again for 30 minutes or so .
Bake at 350 degrees F. for 20 -30 minutes.

Well - I have to say that when I wanted to learn how to make bread Mom took the time to measure all of the ingredients as prior to that she just did it like her mother - a bit of this and a bit of that. No measuring necessary for these lovely ladies!
