2 large unpeeled baking potatoes
olive or vegetabel oil
1 cup (4 oz) colby/montery jack cheese
6 bacon slices
1/3 cup green onion (about 2)
1/4 cup bbq sauce or salsa

Directions:
Directions:
Preheat oven to 450º. Cut potatoes into 1/4 inch slices. Brush both sides with oil. Place rounds on a baking stone or sheet pan. bake 20 minutes or until lightly browned. Remove from oven.

Meanwhile, cook bacon until crisp, drain and crumble. In a medium bowl, combine bacon, schees and sliced green onions and toss together. Brush each patoto round with bbq sauce (or salsa) and sprinkle with cheese mixture on top. Return to over and bake for 3-5 min until cheese is melted.
