1-2 teaspoons Thai or Indonesian chili paste (sambal oelek)
1 # boneless skinless chicken breast, cubed
1# bow tie pasta
6-8 Tablespoons basil pesto
1/2 cup cilantro, chopped (optional)
1/ Cup Parmesan cheese
Basil Pesto:
1/4 Cup olive oil
1/4 Cup fresh basil leaves, packed
2 Tablespoons pine nuts, toasted
1 clove garlic

Directions:
Directions:
Heat olive oil and chili paste in a large skillet.
Add chicken and cook until golden brown.
Cook pasta in boiling salted water according to package directions unril al dente. Drain.
Place chicken mixture in a bowl add basil pesto, cilantro and cheese.
Add cooked pasta and toss lightly.
Serve with additional Parmesan cheese if desired.
For Basil Pesto:
Combine all ingredients and process in a blender until creamy.
