2 1/4 cups of sugar
2 beaten eggs
4 cups of granny smith apples (peeled and cubed)
2 tsp of cinnamon
1 tsp of salt
1 cup walnuts or pecans in large pieces
1/2 cup oil
2 tsp vanilla
2 cups flour
2 tsp baking soda.

Grease a 12 cup bundt pan with Pam
Combine the sugar & oil.
Stir in the eggs &vanilla.
Sift the dry ingredients together. Add the nuts to the flour .
Add the apples to the wet ingredients. Then add the dry ingredients and stir until it is well blended.Pour into the bundt pan and bake at 350 degrees F. for
1-1 1/2 hrs. Watch the heat and the time. This is a heavy cake so it needs to be done in the center of the cake. Insert a toothpick if in doubt. If it comes out clean then the cake is done .
Cool on a rack for 30 minutes and turn out the cake. Store in air tight container at room temperature. This cake can be made a day ahead if you wish.
Serve with whipped cream .

This is a very good apple cake that I would not hesitate to serve to company. Just be sure to use the granny smith apples as stated in the recipe.
