4 fillets of salmon with skin
2 lb dark brown sugar
1 c kosher salt (not table salt - want coarse)
Yoshida’s Gourmet Sauce

Cut each fillet in half so you have 8 pieces. Combine sugar and salt. Put 2 pieces skin side down in a ziploc bag. Put on some sugar mix. Flip bag, put 2 more pieces of salmon on top of those, skin sides together, and put on more sugar mix. Do same in another bag. Use all of sugar mixture. Zip up bags and refrigerate overnight or 8 hours minimum. Flip bags several times and squeeze to mix sugar and salt if they stay dry with the salmon juice that develops. When ready to smoke, rinse off and put in smoker with alter chips. Smoke until done (8-10 hours in my Little Chief smoker).
