2 cups of water
2 cups of finely grated beets
1/2 cup of shredded carrots
1 cup of finely onions
2 potatoes cooked and cup into chunks
2 cups of soup stock
1 cup of tomato juice
2 tbsp. of butter
1/2 cup of finely shredded cabbage.
1/2 cup of beet tops
a pinch of green dill
1 cup of thick sour cream

Boil all of the above ingredients together-- except the cooked potatoes and the cream . Potatoes are added last so they so not discolor, The cream should not be allowed to boil so just fold into the borscht and enjoy..
