3 cups sugar
1 cup oil
4 eggs
Zest of one lemon
2 1/2 cups pumpkin
3 1/3 cups flor
1/2 tsp. salt
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1 1/2 cups chopped walnuts

CREAM CHEESE FROSTING
8 oz. brick of cream cheese
1/4 cup orange juice
Zest of one orange

Preheat oven 350º

Mix sugar and oil well. Beat in eggs one at a time. Add lemon zest and pumpkin. Sift the dry ingredients together; stir in nuts so they are well coated. Gradually add the dry ingredients to the pumpkin mixture, blending thoroughly. Pour the batter into two well greased loaf pans. Bake about an hour and ten minutes. A cake tester inserted should come out clean. Place loaves on a cake rack to cool for ten minutes before removing from pans.

CREAM CHEESE FROSTING
Beat all ingredients together and mix well. Spread frosting on cooled bread and serve.
