1 c (125 g) almond meal
3/4 c (90 g) vanilla whey protein powder
2 tbsp (15 g) wheat gluten
1 c soft butter
1/3 c splenda
2 tbsp artificial sweetener (xylitol or erythritol)
1/2 tsp salt
1 tsp vanilla
1 1/2 c (190 g) finely chopped pecans
6 oz sugar-free dark chocolate, finely chopped

Directions:

Combine almond meal, protein powder, and gluten. Set aside. Beat butter, splenda, and sweetener until very creamy and fluffy. Beat in the salt and vanilla. Add the dry mixture 1/3 at a time. Stir in nuts and chocolate. Chill dough for a few hours. Make 1 1/2" balls and place on ungreased baking sheet. Bake 10-12 minutes at 350º.
